Beef Stroganoff

Beef Stroganoff

6 tablespoons butter
3/4 cup minced onion
2 pounds Sweet Stem Farm ground beef
1/2 pound mushrooms, sliced
Salt and freshly ground black pepper
1/8 teaspoon nutmeg
1 cup sour cream, at room temperature

Melt half the butter in a heavy skillet.  Add onions until cooked through, then set aside.  Brown beef over medium-high heat. Remove from heat with onions. Add the remainder of the butter to the skillet.  Stir in mushrooms and cook 3 minutes. Season with spices and whisk in the sour cream – do not allow to boil.  Add the beef and onions to the pan and heat.

Philip and Dee have used Merguez sausage in place of the ground beef in this recipe as well!
